Foie Gras is a goose liver, geese naturally gorge themselves when they are comfortable in the environment where they eat and have abundance of food. Foie Gras is a delicacy and when prepared properly (that is cured, set, tempered, seasoned) it can re-define your appreciation for it.
Potted Foie Gras is cured Foie Gras that is set in a bowl rather than a terrine mold. Usually it is covered with a thin layer of jelly. In the above picture we are covering the potted foie with a thin layer of peach jelly and garnishing the foie with pumpernickel crumble, compressed peach, cherry jam and sorrel leaf.
