When creating a new dish there is an excitement to it, a pressure to impress and raise standards, It drives the search for perfection, the need to question and critique, to complicate and simplify.

Crudo is another word for "raw or naked" often using fish but can apply to meats such as prosciutto. Here we are using Hamachi, a Japanese white fish. We simply season the fish with sea salt, fresh wasabi and poppy seeds for a light crunch. this adds texture, spice and flavor to the fish.

For garnishes we have pickled tomatoes and honjimeji mushrooms, raw garnishes include jalapeño, radish, nasturtiums, marigolds and pansy flowers. Simple but delicious.
