This was a fun dish, Popped Sorghum.
While this dish was not successful it was fun. its is a great example of the creative process, we complicate and simplify. Here we considered popped sorghum for texture although the competing textures were too distant to be great. A really good fail though, we learned that the tuna would be great with the olive praline and olive oil.
Tuna & Olive - Classic.
Under the tuna is an olive oil jam made with inverted sugar, olive oil and egg yolks. you make a mayonnaise with them and cry vac the jam to remove the air and it will turn translucent. A very cool method for fat. TBD.
